- 50 g unsalted butter
- ½ tsp salt
- 1 tsp granulated sugar
- 75 g all-purpose flour
- 2 large eggs, at room temperature

- 250 ml whole milk
- 1 vanilla pod or 1 tsp vanilla extract
- 3 large egg yolks
- 60 g granulated sugar
- 20 g cornflour
- 20 g unsalted butter
For the Topping
- 200 g fresh strawberries, hulled and sliced
- 2 tbsp icing sugar, for dusting

Instructions

Step 1: Make the Choux Pastry
Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper. In a medium saucepan, combine the water, butter, salt, and sugar. Heat over medium heat until the butter melts and the mixture comes to a rolling boil. Remove from the heat and add the flour all at once. Stir vigorously until the dough forms a smooth ball that pulls away from the sides. Return to low heat and cook for 1–2 minutes to dry out the dough. Transfer to a bowl and cool for 5 minutes. Add the eggs one at a time, beating thoroughly after each addition. The dough should be smooth, glossy, and fall slowly from a spoon.
Step 2: Pipe and Bake
Transfer the dough to a piping bag with a 1.5 cm nozzle. Pipe 10–12 cm strips onto the baking tray, leaving space between each. Smooth any peaks with a wet fingertip. Bake for 15 minutes, then reduce the temperature to 180°C (350°F) and bake for another 10–15 minutes until golden and crisp. Do not open the oven door during baking. Once baked, pierce each eclair with a skewer to release steam and cool completely on a wire rack.
Step 3: Prepare the Pastry Cream
In a saucepan, heat the milk with the vanilla pod until it just simmers. In a bowl, whisk the egg yolks, sugar, and cornflour until pale. Remove the vanilla pod and gradually pour the hot milk into the egg mixture, whisking constantly. Return to the saucepan and cook over medium heat, whisking continuously, until it thickens and comes to a gentle boil. Remove from heat and stir in the butter. Transfer to a bowl, cover with plastic wrap directly on the surface, and chill until completely cold.
Step 4: Assemble the Eclairs
Once the eclairs and pastry cream are cold, make three small holes in the bottom of each eclair. Fill a piping bag with the chilled pastry cream and pipe it into the eclairs through the holes until they feel heavy and full.
Step 5: Add the Strawberries and Dust
Arrange the filled eclairs on a serving platter. Top each one with overlapping slices of fresh strawberry. Just before serving, dust generously with icing sugar.
