Zucchini makes a lovely base for a quick homemade snack, especially when paired with Parmesan cheese and a few familiar seasonings.
This recipe keeps preparation simple, using paprika, dried thyme, and salt to bring out the zucchini's natural flavour. A baking rack helps hot air circulate around the pieces, while two additions of Parmesan create a more even cheesy coating.

Ingredients for Parmesan Zucchini Sticks

2 medium zucchini
2 tbsp extra-virgin olive oil
½ tsp paprika
½ tsp dried thyme
½ tsp salt
¼ cup shredded Parmesan cheese

Preparation and Cooking Instructions

1. Preheat the oven to 425°F (about 220°C).
2. Place a baking rack over a large, rimmed sheet pan.
3. Wash the zucchini, trim the ends, and cut each one lengthwise into halves.
4. Slice each half into long wedges of similar size.
5. Place the zucchini pieces in a large mixing bowl.
6. Drizzle with olive oil, then add paprika, dried thyme, and salt.
7. Toss until the seasonings coat the pieces evenly.
8. Add half of the shredded Parmesan and toss again.
9. Arrange the zucchini on the prepared rack with the skin sides facing down, leaving a little space between the pieces.
10. Sprinkle the remaining Parmesan over the zucchini.
11. Bake for approximately 25 minutes, until the cheese is lightly browned.
12. Remove from the oven and allow the pieces to cool briefly before serving.

Getting a Better Baked Texture

A few small preparation details can make a difference to the finished result. First, avoid crowding the baking rack. When the zucchini pieces are placed too close together, steam can collect between them and affect how the surfaces cook. Leaving a little room allows the hot air to circulate more freely.
Cutting the wedges to a similar thickness is also helpful. Very thin pieces may soften sooner, while thicker ones can need more time to become tender. Keeping the portions consistent makes it easier to follow the suggested baking time. The Parmesan should be spread across the pieces rather than gathered in large piles. An even layer gives each wedge a better chance of developing a lightly toasted coating. Keep an eye on the cheese toward the end of baking, since the desired finish is lightly browned rather than overly dark.

Serving Ideas

Serve the zucchini sticks warm as an appetizer, afternoon snack, or side dish alongside a simple homemade meal. Their long shape makes them easy to arrange on a serving plate, and the Parmesan coating gives them enough flavour to be enjoyed without complicated preparation.
For a casual gathering, place them in a shallow dish while leaving some space between the pieces. This helps prevent the warm zucchini from becoming crowded and softening too quickly. They can also be paired with a preferred dipping sauce if you want an additional flavour option.
